Spiced Raisin cloud bread/ muffins
Perfect for toasting.
12 Muffins 3" x 1" rounds

🍥125g reg. Cream Cheese
🍥 3 eggs
🍥 2 tbsp. Sultanas
🍥 1 tbsp. psyllium husk
🍥 4 tbsp. Almond Meal
🍥 1 tsp Xanthan gum
🍥 2 tsp liquid stevia
🍥 1 x tsp cinnamon
🍥 1/2 tsp nutmeg
🍥 1× tbsp. tapioca flour (arrowroot)
🔪1. Separate eggs. Add sweetener, xanthan gum and arrowroot to whites and beat until stiff.
🔪2. Soften cream cheese, mix together with yolks, add almond meal, spices, psyllium husk and sultanas.
🔪3. Add egg whites and fold through.
🔪4. Spoon onto a lined baking tray, use the back of a wet spoon to gently smooth out into rounds.
🔪5. Put in oven at 160°C/320°F and bake for until golden.
♡♡ pop in the toaster for breakfast, and have with butter OMG!
